Choy Fong's Ginger Factory

The of Choy Fong Ginger's Factory, situated at No.8, Sai On Lane, West Point, was built in the 1950s. The ginger was imported from Canton and preserved in the local factory which was equipped with appliances and a boiling pan of a specially improved pattern. Each year the factory produced 30,000 picule of preserved ginger and packed the products for export to the Western market. Its products were mainly exported to the Chinese retail shops in San Francisco. The banner that was hung outside the factory said that it handled orders from export firms to export confectionaries to the USA and other overseas countries.
